FISH CAKE RECIPE by Alexfraga

This recipe was made for fish like some types of “scorpion fish” but it´s really good with wrasse ballan.
We will use a large mould (20-30cm)
– 500g fish, wrasse or other. Without bones.
– 4 eggs
– 4 surimi sticks
-2 tomato sauce or ketchup big spoons.
-1 red pepper
-100 ml of cooking cream
-1 onion, 1 leek, 1 carrot, bay leaves. olive oil, salt and pepper.
– We make the soup, around 10 minutes. Then we put the fish and boil it another 15 minutes. We will only use the fish in this recipe. The soup could be used to other different one (or waste it)
-Brake the fish into small pieces (no bones)
-Crush the pepper and the surimi. Add to the fish. And keep it.
-Beat the eggs and add ketchup/tomato sauce and the cream. Whip it again.
– Add the fish and shake it untill we have a consistent pastry. try it a add salt or pepper if it need it. And keep it.
-MOULD: Put butter inside and baking paper in all sides. Preheat the owen 180º
– Put the pastry inside, and hit the mould over the table to remove the air or bublles. it´s our last chance to try it (salt and pepper)
Cook it 50-60 minutes. Let it get cold and fridge it 2 hours. It´s done!
It´s very good for kids, and we can use wrasse ballan. Can be frozen.
